Summer is the time for grilling things like hot dogs, sausage dogs, steaks, and burgers! There’s nothing quite like a pool party and food on the grill. That’s why I’m sharing one of our favorite recipes with you. Stuffed burgers is a delicious combination Rusty has been making for years. Friends request this when they come to visit or when we go on vacation together. It’s definitely worth learning how to do stuffed burgers. They taste absolutely amazing!
However, if you don’t have time to figure out how to do stuffed burgers, you can just stick with the burger recipe without the filling. It’s also our go-to combination of spices that makes a delicious party burger. Whatever version you choose, you can’t go wrong with this Cheese Stuffed Burger recipe!
How To Do Stuffed Burgers

- Cheese Filling Ingredients:
1 Onion
1 Green Bell Pepper
4 Oz Mushrooms
1-1 1/2 Tab Oil (we prefer butter, beef tallow, or bacon grease)
8 Oz Cream Cheese
- Burger Ingredients:
2.25 Lb Ground Beef
2 Eggs
2 Tab Worcestershire Sauce
Sprinkle of Cayenne Pepper
2 Tab Garlic Salt
1/2 Tsp Pepper
1/2 Tsp Tony’s Original Creole Seasoning
Directions
- For Cheese Filling:
- To make burgers without the cheese filling, skip down to step 4. For the cheese filling, start by chopping the onion and pepper into small pieces. Slice the mushrooms.
- Heat up oil on low to medium heat. Add the veggies and saute. Continue to cook until veggies are caramelized.
- In a small bowl, stir veggie mixture into cream cheese. Put in fridge to chill until needed.
- For Burgers:
- Dump beef, eggs, and seasonings in a large bowl. Stir until well-mixed. I like to wear gloves and mix thoroughly using my hands. Feel free to adjust seasonings to preferred flavor.
- Form 8-12 thin patties; each patty will be a top or bottom to the stuffed burger. You can adjust the size depending on how large you want them to be. Once you’ve formed the patties, pull out the cream cheese mixture and add stuffing onto one side. Put a second patty on top and squeeze the edges together to seal. It should form at least 4-6 large stuffed burgers. It’s totally fine if you have leftover cheese mixture.
- Put patties in the fridge to chill for at least 30 minutes. You can use the freezer to speed up this process, but make sure you don’t accidentally freeze the burgers.
- Cook until cooked thru (*See Note 1). Enjoy!
Notes
- The burgers are delicious on a grill cooked until internal temp reaches about 160 degrees or until preferred cooking is reached. We also love throwing them on the smoker at about 400 degrees. You can also cook these on the stove, but the grilled flavor from grilling or smoking them gives them a much better flavor!

Is It Worth Figuring Out How to Do Stuffed Burgers?
This depends on who’s eating the burgers and how much time you have. As I mentioned above, just the burgers without the cheese filling are delicious. If I’m making a bunch of burgers for a party or for a bunch of kids, this is my go-to recipe. However, if you’re looking for something that tastes even better and will elevate this recipe, you should definitely try the Cheese Stuffed Burgers. They taste amazing and are worth the extra time spent prepping the cheese mixture. Is It Necessary to Chill the Cheese Mixture and the Formed Burgers?
There are two points in the recipe where I recommend throwing the cheese mixture or the completed burgers in the fridge. The cream cheese mixture is much easier to work with when it’s thicker than when it’s melting to room temperature. In a similar way, the formed burgers hold up better when you give them a few minutes to chill. Although these steps are not necessary to achieve delicious burgers, they will help everything hold together and make working with the ingredients and cooking the burgers a much smoother process.
What Do I Do With Extra Filling?
When we make this recipe, we have a good bit of cheese mixture left at the end. You can use this in just about anything. If it’s something you heat up, you’ll get that creamy cheesy texture that tastes so great. You could heat it up in a sub and add other meats and cheeses. You could do something similar in a quesadilla. Another option is to throw the mixture as is in an eggroll. Another option is to add it to an omelet. You could also pop the mix in the fridge or freezer for another round of stuffed burgers. The possibilities are endless!

What Are Our Favorite Condiments for Cheese Stuffed Burgers?
Just like you get to pick your own cooking preference for a burger, feel free to experiment with your favorite condiments. Once we started making cheese stuffed burgers, my favorite condiment to add quickly became mayo. It’s simple and complements all of the other ingredients really well. Is There a Healthy or Low-Carb Option for Eating Cheese Stuffed Burgers?
There are many ways I enjoy eating Cheese Stuffed Burgers. My favorite is on home-made yeast rolls made with freshly milled flour. Ezekiel bread is another healthy option. One slice of Ezekiel bread, cut diagonally, works great as a hamburger bun. Either way, we love to toast the buns.
If we don’t have fresh homemade rolls around, my kids love using just regular hamburger buns. If you’re really trying to stay low-carb, you can eliminate the bread altogether. Sometimes, Rusty will just eat 2 patties without any bread at all. It really comes down to what you enjoy and what your personal goals are. For me, you just can’t beat stuffed burgers, adding some homemade mayo, and enjoying it on a warm yeast roll!

What Are Some Great Ways to Get Healthy Beef for Cheese Stuffed Burgers?
You can make this recipe using whatever ground beef you usually use for burgers. Last year, we were able to buy part of a cow. The taste of the beef was really delicious. Since then, we’ve stuck with organic grass-fed beef until we are able to restock our supply. If I’m making a lot of patties for a bunch of people, I’ll just use a lower fat cheaper beef. The more organic and closer to nature you can get, the healthier. However, you can definitely tweak it depending on what you have available and who you’re making it for.
Why Limit Learning How to Do Stuffed Burges to Summer Night Grilling?
Figuring out how to do Stuffed Burgers is great for anytime! I think of it as a summer treat because grilled burgers go so well with the 4th of July, fireworks, and pool days. To be quite honest, I would eat a burger any time of the year. We live in southeast Georgia, so there are very few days that are too cold to consider grilling out.
