This Chicken Avocado Melt Recipe is one of those foods. My husband started making it for us years ago. The reason I haven’t shared the recipe before now is because he throws it together without measuring a thing. I had to slow him down and write down everything he did so I could share it with you guys! The Chicken Avocado Melt Recipe has always been a delicious, healthy dinner. Chicken Avocado Melt Recipe

1 1/2 Lb Chicken Breast
1 Tbsp Oil (either avocado oil, olive oil, beef tallow, or bacon grease works good)
1-2 Tbsp Weber New Orleans Seasoning
6 Oz Guacamole (*see note)
4 Oz Block Colby-Jack or Calico Cheese Shredded
Optional Topping: Bacon
Directions
- On a cutting board, trim any unwanted fat from chicken. Cut in half so that you have a large thin top and bottom piece of chicken.
- Lightly coat both sides of chicken with Weber New Orleans Seasoning.
- Heat up oil in pan and add chicken. Cook chicken on medium to low heat until cooked thru (about 165 degrees internal temperature).
- Add guacamole and cheese onto top of pieces of chicken. Turn heat down to low or off and put lid on pan. Let sit for a minute to melt the cheese. Enjoy! We love eating it over rice or quinoa. If you’re a bacon lover, you can also top it with cooked bacon.
Notes
- You can adjust the amount of guac and cheese to your liking. We usually make our own guac using this Recipe, but you can also use store-bought guac.

What’s the Best Way to Prep the Chicken?
The most important thing is how you cut the chicken. If you can cut it the long-way, you’ll end up with 2 thin but large pieces of chicken. That’s perfect for getting it to cook thru quickly and having a good area to spread the toppings on.

For the cheese, you can use any kind of cheese you enjoy eating. We usually shred a block of Colby-Jack. Since we have been receiving regular orders from Azure Standard for our wheat berries for bread, we’ve been getting their Calico Cheese. It tastes even better on meals like this! We like to price compare with local grocery stores, but they have tons of natural foods that you can buy in bulk.
Last week was the first time we added bacon on top. It was delicious! If you really like bacon, this will be a topping you’ll want to try. If you’re looking more for a cheesy comfort food, I also love it plain with just the guac and cheese.

The guacamole and cheese are what make this Chicken Avocado Melt Recipe so special! They melt into a delicious, yummy topping that goes great with the chicken. I usually throw together some homemade guac while my husband is cooking the chicken. Here’s our 5-minute Mexican Guacamole Recipe. It’s so fresh and so simple.
If you don’t want to take the time to actually make homemade guac, you can also pick up guacamole from the grocery store. One of my favorites is the individual 2.5 ounce packs of guac at Sam’s Club. It tastes good and lasts a lot longer than avocados. It’s been great having sealed guac ready to go anytime we want a healthy sauce or dip for a meal. If you can find guac like this, one that’s simple and has all natural ingredients, it can make keeping guac in the house so much easier.
What Do We Eat With This Chicken Avocado Melt Recipe?
Chicken Avocado Melt is the perfect protein for a “perfect plate.” A perfect plate is made up of 1/2 plate of veggies, 1/4 protein, and 1/4 healthy carb. Click here to learn more about the Perfect Plate. For the carb, I’ll usually make quinoa or brown jasmine rice and put the chicken right on top of it. Most of the time, we’ll roast veggies for the side. We really like things like squash and zucchini, but you can also do a salad as the veggie.
When you have a guide to follow, such as the Perfect Plate, it makes eating healthy so much easier. It also comes in handy if you’re at a restaurant or event and are trying to make your plate but still eat a healthy meal.

Does the New Orleans Seasoning Make It Spicy?
The Weber New Orleans Seasoning is what gives the chicken so much flavor. I don’t love spicy things, and I really enjoy this meal. If you put on a ton of the seasoning, it might taste too spicy or even salty. But, if you give it a generous coating on both sides of the chicken, it creates the perfect flavor to go with the guac. I think this seasoning gives it a wonderful seasoned flavor that matches well with the rest of the recipe. It definitely gives the Avocado Chicken a distinct flavor. We don’t make this recipe unless we have this seasoning in the house.
Our Family Made the Chicken Avocado Melt Recipe At Disney World
This recipe is so simple but so yummy! It’s one of the meals we planned to make for a big family trip to Disney World. We spent multiple days in the parks and were staying in a huge house with a lot of close family. One of the few days we were actually at the house for dinner, we planned this meal. It was the perfect meal for a trip like that! It was so delicious and so easy. Rusty and I usually teamwork meals like this. I’ll make the carb and sides, and he’ll prep and cook the chicken. It’s not complicated, and it turns out every single time.
This Brings Back So Many Memories From Our Disney World Trip
That trip was one of the few times our entire family has gone out of state together. My grandmother and grandfather “accidentally” rode one of the big rollercoasters, thinking it was a slower ride. We spent the nights in the hot tub and playing games around the table with siblings and our cousin. I walked all over Disney 7 months pregnant with our third child, so he got to “do Disney” even though he doesn’t remember any of it. It’s memories like these that our so special.

It’s moments like these that I am grateful for family and the fun memories we make together!
