Healthy Mayo Recipe

1 Egg
1 Cup Avocado Oil
2 Tsp Lemon Juice
1/2 Tsp Dijon Mustard
1/2 Tsp Salt
Directions
- Add ingredients in order into a wide-mouthed mason jar.
- Using an immersion blender, whip the ingredients for about 2 minutes. Start by whipping the egg at the bottom of the jar. It should become white and thick. As you continue mixing, gradually move up the jar, completely mixing the oil and other ingredients into the mixture. When it’s finished, it should be smooth and thick like mayonnaise.
- Store in the refrigerator in a sealed container for up to 1 week.
Making Healthy Mayonnaise is a Gamechanger
When you make your own mayonnaise, there are so many other things you can make. Mayo is great on a sandwich or wrap. It’s also a wonderful base for a chicken or egg salad, or even some kind of shrimp/crab salad. You can use homemade mayonnaise to make Japanese white sauce (yum-yum sauce) or ranch dip or dressing.
