Recently, we had an Aldi Supermarket open in the town near our home. Of course, I excitedly googled ALL the top items to try and awaited the grand opening day. It was way too crowded for me. However, some of the top items on my list to try were the Mexican Corn Dip and the Mama Cozzi Pizza. My husband and I fell in love with the corn dip, and my kids have been requesting the pizza. They were definitely big hits. That got me thinking… was there a way to make a version of the dip at home? That’s what led to the creation of this recipe for Warm Mexican Corn Dip!
Warm Mexican Corn Dip

2 8 Oz Blocks Cream Cheese
2 15.5 Oz Cans Whole Kernel Corn
1/2 Cup Sour Cream
1/2 Cup Unsweetened Original Almond Milk
8 Oz Block Cheese (shredded; I like using Colby Jack cheese for this recipe)
2 Tsp Minced Garlic
3/4 Tsp Salt
1 1/2 Tbsp Tajin Seasoning (plus more to sprinkle on top)
1/4 Cup Fresh Cilantro (chopped)
2 1/2 Tsp Lime Juice (squeezed fresh from a lime)
2 Tbsp Queso Fresco Crumbling Cheese
Directions
- Put the first 9 ingredients into a crockpot (everything except the lime juice and queso fresco).
- Cook in crockpot on low for 2 hours, or until everything is melted and warm. Stir every 30 minutes or so to make sure cheese isn’t sticking to the sides.
- When dip is ready, add lime juice and stir into dip.
- Crumble Queso Fresco cheese and sprinkle Tajin on top either directly into crockpot or into individual serving bowls. Enjoy hot! You can store in refrigerator and eat either hot or cold.

Is This Warm Mexican Corn Dip recipe spicy?
This corn dip recipe is not spicy. In fact, if you try the dip before adding the lime juice at the end, it can almost taste bland. Adding the lime juice makes a huge difference! My husband experimented and added some other seasonings to his bowl: chili, cumin, and cayenne pepper. I felt like this made the dip taste more like a taco flavor. If that’s what you’re going for, you can experiment with some of these spices. I really love the flavor of the tajin and lime. I don’t think you need the additional spices if you’re going for a creamy, cheesy dip. However, feel free to experiment to get it the way you like it.
What Should I Eat with Warm Mexican Corn Dip?
This dip is great for dipping tortilla chips into. Some of our family favorites are blue chips and veggie crisps. Any of your favorite crackers or chips would probably be delicious in this hot corn dip. This would be great as an appetizer or as a side for either a Mexican meal or for something like burgers or wraps.

Is this Warm Mexican Corn Dip Healthy?
This recipe is full of whole, all-natural ingredients. I really enjoy making dips and other recipes that have ingredients that are good for my body. That being said, some people do better with dairy products than others. If your body doesn’t respond well to dairy, you could try non-dairy substitutes. Otherwise, the ingredients in this dip are good for your body and fit well into a whole-food meal plan.
What if I’m on a Weight Loss Journey?
Although the Warm Mexican Corn Dip is full of whole foods, it is high in fats. This isn’t necessarily bad. The key is to have a balanced meal that doesn’t add in a lot of unnecessary carbs or more fats. This corn dip does have some protein and healthy carbs as well, but the majority of the macros come from fats.
What does this mean if you’re trying to lose weight? I believe that eating healthy is a balancing act. Fats in itself is not bad for weight loss. Even keto relies on fueling your body with fats instead of Carbs. However, too many fats and calories can stall weight loss.
It’s also important to keep in mind that having delicious recipes that are full of healthy ingredients can make a meal plan sustainable. If you can’t ever have a cheesy, yummy dip, then will you really stick to your meal plan over the long haul? For our family, these kinds of recipes make eating healthy sustainable and enjoyable. Just understanding the macros in this dip equips us to eat it in a way that helps us achieve our fitness goals. It makes staying on-track that much more attainable.

Why Should I Use Almond Milk Instead of Regular Milk?
This recipe calls for almond milk. However, you could use regular milk if that’s what you have on hand. In the modern world, a lot of milk has been overly processed and has lost a lot of it’s health benefits. The majority of milk in the United States also comes from A1 cows. If you can find milk that comes from A2 cows (which is more widely available in places like Europe), and hasn’t undergone as much processing, that is a healthier choice.
A lot of times, my family will simply use Almond Milk instead. It’s low in calories and works great in recipes like this dip recipe. I would stick with unsweetened almond milk, so you’re not ending up with added ingredients that aren’t good for you. I would also go with the original flavor, to avoid this Warm Mexican Dip having an odd “vanilla” flavor.

When to Enjoy This Warm Mexican Corn Dip
Of course, you can totally enjoy this Warm Mexican Corn Dip anytime! It’s perfect for a taco night or as a side for Quesadillas. If you’re eating healthy and are missing chip and dips as a side or appetizer, it is a perfect whole food substitute.
Sometimes, I get in the mood for a yummy side to go with burgers or a wrap. This would be delicious for that. You could also make this dip for Game Day guests or to enjoy at a party. It would be super easy to double the recipe, and would be warm and cheesy throughout the afternoon or night. I love having healthy recipes that also taste amazing! It makes living a healthy lifestyle sustainable over the long haul!
