When it’s cold outside, sometimes it’s simply a “perfect” day for soup. I used to love feeding my family tomato soup with grilled cheese sandwiches. It was a cozy meal everyone enjoyed. However, now that I’m more aware of unwanted ingredients, like sugar and wheat flour, I like to avoid pre-packaged soup. This Easy Vitamix Tomato Soup lets you throw together all-natural ingredients in 5 minutes and still feed your family a tomato soup they will love!
If you have a Vitamix blender, you can even cook the soup directly in the blender, without ever turning your stove-top on at all. If you don’t have a Vitamix, don’t worry. You can still mix the ingredients in a blender and heat it up on the stove. It’s amazing having a healthy, cozy tomato soup recipe that takes minutes to make and is perfect for a quick lunch or to warm you up on a cool evening!

kcalIngredients
1 Cup Vegetable Broth
1/2 Cup Unsweetened Original Almond Milk
2 29-ounce Cans Diced Tomatoes (with the juice)
2 Tab Tomato Paste
2 Tsp Olive Oil
1 Tab Minced Garlic
1 Tsp Dried Oregano
1 Tsp Salt (I like to use Pink Himalayan Salt)
1/2 Tsp Ground Black Pepper
1/2 Tsp Stevia (*See Note 1)
Directions
- Add all ingredients into the blender. (*See Note 2 if you do not have a Vitamix)
- Click “soup” setting on Vitamix and let blender mix and warm up soup. I like to add about 1-2 minutes on high at the end to make sure soup is completely warm. You can adjust this to get it the right temperature for you. See note 2 if you do not have a blender with a “soup” setting.
- When soup is warmed thru, carefully avoid steam and remove lid.
- Pour in bowls and enjoy with your favorite sides or toppings (my family loves it with shredded cheese, sour cream, grilled cheese sandwiches, and crackers). (*See Note 3 if you want your soup to be creamier)
Notes
- You can use sugar or another sweetener, but I like using Stevia to avoid the added sugars.
- I like to use a Vitamix blender because it is very powerful and has a “soup” setting that warms up the soup for you directly in the blender. If you do not have a Vitamix, you can mix everything in a blender and then heat the soup mixture up on the stove until warm.
- I like the recipe as is, but if you like tomato soup with a creamier texture, you can add sour cream or heavy cream after soup is warm.

What Kind of Blender Do You Recommend for Easy Vitamix Tomato Soup?
I love having a Vitamix in the house! My family has gotten to where we drink smoothies every single day. With at least someone in the house using the blender daily, and sometimes more, we found our blender blades wearing out. We would have to replace them about every other month. That’s when we decided to invest in a Vitamix. It’s held up great to daily use, and it has my new favorite feature: a “soup” setting.
That’s right, you can make soup without even having to turn on your stove. The Vitamix motor is so powerful, it literally heats the soup up for you. This makes feeding my family a quick and delicious meal so quick and simple. Even the kitchen cleanup is minimal. Yes, I’ll admit it, I’m an Instant Pot girl too! I’m a big fan of anything that makes feeding a family of 6 easier, especially when it comes to quick and tasty meals.

But I Don’t Have a Vitamix Blender…
If you don’t have a Vitamix, don’t worry. You can still mix all of the ingredients together in a blender until smooth. Then, you’ll need to heat it up on a stove top just like a can of regular tomato soup. The plus side is that you’re avoiding all of the additives and preservatives that are in store-bought soup (without even sacrificing a lot of prep time to do it).
What Are My Favorite Toppings and Sides For Easy Vitamix Tomato Soup?
When I was growing up, I usually enjoyed tomato soup one of two ways. The first was topped with a blend of shredded cheese, ritz crackers, and sour cream. My kids still love eating soup this way!
Since eating healthy doesn’t really include ritz crackers, the second way to enjoy it is with a grilled cheese sandwich. You can make it with Ezekiel bread, homemade bread (with fresh milled flour), or another healthy bread. If you want more protein in your meal, you can add some deli meat or rotisserie chicken to turn it into a panini. Sometimes, my husband and I want the experience of a grilled cheese without a lot of carbs, so we just split an Ezekiel bread grilled cheese. Ultimately, whatever you picture in your mind as the perfect way to eat tomato soup should be delicious using this recipe.

What if I like Creamy Tomato Soup?
This Easy Vitamix Tomato Soup recipe is not very creamy. It’s thick and smooth, which I love. However, I have had someone try it and ask how to make it creamier. Just like with canned soup, you can top it with sour cream. Stirring sour cream in not only will make it creamier, but it also helps cool the soup down faster.
You can also try stirring in a little heavy cream after the soup is finished cooking. That way, you can adjust the amount based on personal preference, and it won’t affect the way the soup blends together. Feel free to experiment if you want a creamier texture until you get it the way you like it.

What Makes Easy Vitamix Tomato Soup a Great Recipe to Keep on Hand?
Sometimes, I have cravings for a specific thing. It may be pancakes or something warm and cozy like soup. The more healthy, quick recipes you can throw together, the greater the chance you’ll stick with healthy eating. If you can find a replacement for things like Bisquick and canned soup, one that’s still super easy to make, then you’ll be more likely to make healthy choices for your family on a regular basis.
Living a healthy lifestyle doesn’t mean you can’t ever have tomato soup again. It means being resourceful to come up with new ways to make it. That’s what eating healthy is all about, finding simple swaps for things that are not good for our bodies. The more we recognize those foods that are not healthy, the easier it is to swap them out for better foods. That process is the key to living a healthy lifestyle and feeding our families meals that will help them receive the nutrients they need to grow and thrive.
