How Do You Know When an Avocado is Ripe?
Usually, a green avocado’s skin will turn blacker the more ripe it becomes. You want to catch it when it’s starting to feel soft to the touch. On the inside, you want an avocado that’s soft to the touch and green, without a lot of gray spots.
If it’s too hard and crunchy, it’s probably not ripe enough. This can be frustrating when you are ready to make some guac and you don’t have a ripe avocado to use. One thing I’ve tried before is to put the avocado in a paper bag and add a banana. This can speed up the ripening process. Another trick is to put the avocado and other ingredients into a food processor and blend together. This can make the whole guacamole a lot smoother. Most of the time, when you’re making guac, it can be better to just let the avocados ripen a few more days rather than fighting with avocados that aren’t ripe yet.
If the exterior of an avocado is starting to cave in on itself and is easy to press, your avocado may be past it’s ideal ripeness. If you open it up and it’s mostly gray, then it’s no longer at the ideal stage. Sometimes you can salvage parts of it that are still completely green, depending on how much green is left inside the avocado. If it has a fermented smell inside or is starting to wilt before you even cut into it, you can just toss it in the trash.
Will This Mexican Guacamole Recipe Last in the Fridge?
Air turns avocados into a dark color. If you can seal guacamole where it is air-tight, that can help it last a day or two in the fridge. I like to put it in an air-tight container or tuck saran wrap down into a bowl so that it’s tight directly on top of the leftover guac (not at the top of the bowl but touching the guac itself). It will always be best when it’s fresh. If your refrigerated guac is starting to turn dark on the top layer, you may still be able to scrape it off and find bright green guac underneath that’s still good. Definitely don’t eat the part that has changed to the darker color.
Other Ways to Store Avocados
What do you do if you don’t eat a whole avocado? A lot of times, I’ll use half of an avocado on my egg sandwich or salad. When I only want to eat half of it, I literally cut it in half. The part that I don’t use I leave inside the shell. I cover it completely around with saran wrap and pop it in the fridge. It lasts a couple of days in the skin like this. It’s a great way to save the part you don’t eat so you can enjoy it later!
Why Should I Eat Avocados?
Avocados are a superfood. They’re an excellent source of healthy fats. They’re also full of antioxidants, vitamins, and minerals. It’s one of the foods highly recommended by Dr. Anthony Balduzzi, founder of the Fit Father Project. Check out his short instagram video on avocados he recorded with Dean Pohlman (founder of Man Flow Yoga). Avocados are highly recommended by many health professionals. Making guac is just one way to add more of them in your diet.

What Are Some Other Ways I Enjoy Avocados Besides This Mexican Guacamole Recipe?
To be honest, guacamole isn’t the only way I enjoy eating avocados. They go really well with eggs as a breakfast item too. I love adding an avocado with a little salt and pepper to my egg sandwich. I used to always add mayonnaise. Now, if I haven’t already made healthy mayo, I just add half an avocado instead. Chopped up avocado is also delicious over salad. Once again, you can add everything bagel seasoning, pepper, salt, and other spices to make it the way you like it.

Why Should I Try a Homemade Mexican Guacamole Recipe?
You can pick up guac at most grocery stores, but when you make it fresh, you can make as little or as much as you want. You can enjoy it when it is truly fresh. Also, you know exactly what’s in it. When you add the ingredients, you know you’re avoiding the preservatives, sugars, and other additives that you don’t want in your food. You’re also getting to flavor it the way you prefer. Feel free to experiment and play around with the amounts and types of spices you use.
