This recipe for Coconut Chocolate Energy Bites is super easy. My 14-year-old makes it all the time. This is a favorite with our kids! I love finding snacks that everyone in the family enjoys. One of my “things” is definitely chocolate! These bites are one of those treats I can keep in the house for when I have a sweet-tooth but don’t want to go completely off my healthy eating plan. They are a little high in carbs if you’re trying to lose weight, but they are a whole-foods snack that can make a healthy lifestyle easier to maintain. Coconut Chocolate Energy Bites

1 Cup Dry Oatmeal
2/3 Cup Unsweetened Coconut Flakes
1/2 Cup Natural Peanut Butter
1/2 Cup Ground Flaxseed
1/2 Cup Chocolate Chips (we like to use Bake Believe or Lily’s to avoid added sugars)
1/3 Cup Honey
4 Tab Chia Seeds
1 Tsp Vanilla Extract
Directions
- Mix all ingredients together in a bowl.
- Form into small balls about 1 inch in size. You can use a cookie scoop to scoop them out and then pat them into a rounded shape. *See Note 1.
- Chill in the fridge. Keep stored in fridge in airtight container.
Notes
- If the balls aren’t holding together, you can try sticking them in the fridge for about 30 minutes or adding more peanut butter.
How to Form These Energy Bites
One thing I love about this recipe is that it’s quick and easy. You just throw everything into the bowl. The most challenging thing is to form the balls. The last few are especially difficult if the mixture isn’t well mixed.
It’s recommended to let the mixed ingredients sit for 30 minutes before forming the balls. You can also try adding more peanut butter or honey to help the ingredients stick together better. I was able to form them without letting them chill first. Another pro-tip is to use a cookie-dough scoop. Just packing it in tight into the scoop helps it form a cohesive shape. Then, you can just pat it a little more to make it shaped into a ball.
Are These Coconut Chocolate Energy Bites Good for You?
It’s great having a snack that tastes yummy but is also providing the body with things it needs. Chia seeds are considered a super food. Flaxseed and chia seeds are both a good source of fiber. Peanut butter and flaxseed are also full of protein. What I love the most of about these, nutritionally, is that they are made from whole foods. This snack is something you can enjoy while avoiding a lot of the processed, refined snacks found in grocery stores.
We prefer to use Bake Believe or Lily’s chocolate chips, to avoid added sugars. There’s already plenty of natural sugar from the honey. Using natural peanut butter (without sugar) and unsweetened coconut can also help keep the sugars in this recipe at a minimum. Just the chocolate and the honey adds a delicious flavor that transforms this energy bite into a sweet treat.
